We followed a workshop on how to cook foie gras. Mme Dolivet gave us a warm, gourmet welcome. We came up with 3 recipes that were as simple as they were tasty, using local, seasonal produce. A great experience. I recommend it!
Theme-based cooking workshops
In a family atmosphere, La Borie Du Chevrier offers you the chance to take part in themed-based cooking workshops to best suit your needs.

‘Flash cooking demonstration (approx. 30 min)
Cooking pan-fried foie gras and the accompaniment of the day
Using carefully selected ingredients and the day’s market produce, Christine invites you to watch her prepare a pan-fried foie gras recipe in real time!
As you prepare the dish and enjoy the ensuing tasting over a glass of ‘Rosette’, Christine will reveal the secrets of perfectly cooked foie gras!

‘Foie gras workshop
(15th September to 15th June)
Over the course of 3 hours, I’ll reveal everything you need to know about this kingly dish: the semi-cooked foie gras terrine.
From the history of foie gras to its cutting, denervation, seasoning and the secret to cooking it. I’ll answer all your questions while you sample a few dishes accompanied by a glass of Monbazillac.
You’ll leave with a wealth of knowledge and the foie gras terrine you’ve prepared!

‘Canard gras workshop (15 September to 15 April)
Spend 2 nights in our guest house (room Les Glycines or Les Roses), and during your stay learn all the secrets of preparing a fattened duck, from whole duck to sterilised preserves.
During these two days in your company, we will guide you through the preparation of the ducks: cutting, salting, making rillettes, stuffed necks and confits.
At the end of the workshop, you’ll go home with your cooked and packaged products (including the fattened duck, jars, accessories and ingredients).

Workshop schedule :
Day 1
Arrival around 3pm: Opening of the ducks, cutting up and salting
Foie gras option (approx. 600 gr): from the processed duck, denervation, seasoning and cooking secrets: in terrine (cooked or semi-cooked) or raw (vacuum-packed).
Day 2
Morning: Preparation of confits and stuffed necks
Afternoon: Preparation of rillettes and sterilisation of jars
Day 3
Departure with your packaged products
Price: Canard Gras workshop + 2 nights’ accommodation in a double B&B (breakfast included): 510€ (1 or 2 people)

GASTRO’ cookery lessons
Anyone who loves cooking will love taking part in these courses: ‘For a birthday, anniversary or simply to give someone a treat. Give or treat yourself to a gift card: ‘Cooking lessons’. All year round, except July/August

The ‘Tête à tête’ cookery class: ‘foie gras in three ways
(2H class, 1 person +/- 1 accompanying person)
Learn how to make:
- Cream of pumpkin soup with foie gras ravioli
- An egg casserole with foie gras
- Pan-fried foie gras, French toast and fresh grapes
Then enjoy your creations, accompanied by a glass of Rosette and a glass of Pécharmant (drinks included).

Cooking a menu around duck
Cook a complete ‘Gastro’ menu around duck: starter, main course and dessert.
Approximately 2 hours of lessons, with tasting of the dishes!
– Foie gras sushi with dried fruit and maple soy sauce
– Roast duck hamburger with tangy walnut sauce
– Rosette of seasonal fruit in sabayon sauce

Cooking a ‘Black Diamond’ menu
Preparing a complete ‘Gastro’ menu around truffles: starter, main course, dessert
– Foie gras and truffle ravioli
– Gratin du curé périgourdin (truffles and porcini mushrooms hidden in a puff pastry)
– Caramelised truffled apple with truffle sabayon
